Ulus Wild Fumé is made from Sauvignon Blanc, handpicked from an organic certified vineyard in Margaret River. Fermented with wild yeast in a mixture of two and three year old French oak barrels, stirring regularly throughout fermentation. Malo was blocked and the wine was aged sur-lie for 6 months before bottling. No acid additions, finings or filtration.
Intense aromas of mandarin, orange blossom and fresh pineapple. Secondary notes of marzipan, cap-gun and sea salt. Crunchy acid is the backdrop for a generous, complex palate reminiscent of lemon tart, passionfruit pulp and pineapple lumps. A full-bodied white wine with a long, lemon soaked oak finish.
