100% Chenin Blanc from Margaret River. Harvested in early March and fermented with wild yeast in stainless steel. 50% whole bunch pressed and aged in seasoned French Oak. No filtering and no fining. Bottled with minimal SO2.
The 2023 Chenin was a pleasure to create from start to finish. A change in pruning regime, a perfect ripening period made this one easy. Freshly cut honeydew melon, pineapple, peach and lemon awakens the nostrils with this wild ferment Chenin. Pineapple and lemon dominate the palate, sherbety acid, spicy undertones and a long textured finish sets this version apart.
