Picked in mid-March, de-stemmed and crushed into open 1-tonne fermenters destined for gentle hand-powered punch downs with wild yeast leading the ferment. Only 8 days on skins then lightly pressed off into steel to settle for a few weeks. Racked into 3 and 4yr old oak barriques for 14 months elevage prior to bottling. Unfined, unfiltered, minimal sulphites added.

Aromatics of ripe black plum, cherry and a touch of spice (bayleaf perhaps?) and pine resin give way to a plush, velvety palate of dark fruits, cherry fruit leather and blackberry pie. A fruit forward, medium to medium-full bodied wine that is eminently approachable with its dusty, light-weight tannin profile and long, gentle finish.
