2022 Courchevel Chenen Blanc

TINTA CAO CHILLED RED

12.6% Alc/Vol

Handpicked Tinta Cao, crushed into steel vats and fermented with wild yeasts. Left on skins for 9 days and gently pressed off. Aged in steel and bottled unfined, unfiltered with minimal sulphites added.

100% Chenin Blanc from Margaret River. Harvested in early March and fermented with wild yeast in stainless steel. 50% whole bunch pressed. No filtering and no fining. Aged in seasoned French oak barriques prior to bottling. Minimal SO2 added.

Picked in mid-March, de-stemmed and crushed into open 1-tonne fermenters destined for gentle hand-powered punch downs with wild yeast leading the ferment. Only 8 days on skins then lightly pressed off into steel to settle for a few weeks. Racked into 3 and 4yr old oak barriques for 14 months elevage prior to bottling. Unfined, unfiltered, minimal sulphites added.

Handpicked Cabernet Sauvignon from Yallingup in the north of the Margaret River wine region. Open fermented with wild yeast and aged in French oak barriques for 18 months prior to bottling. Unfined, unfiltered, vegan friendly with minimal sulphites.

SYRAH

Hand-picked in late March from our favourite vineyard in the region, located south east of the Margaret River township. Grown organically and without irrigation means small bunch sizes and a concentrated flavour profile. We upped the whole berry component to 50% in ’23 after an outstanding growing season and fermented in stainless steel with wild yeasts. Gently pressed off to a maximum of 1 bar of pressure,  after 7 days on skins with less than 600L / T extraction rate.

Handpicked Grenache and Tempranillo from neighbouring rows in the same Yallingup vineyard, picked on the same day for a true field blend. Co-fermented with a layered mix of whole bunches, whole berries and crushed fruit. Fermented with wild yeast, zero oak, unfined and unfiltered.

ULUS WILD FUMÉ

Sauvignon Blanc grapes were handpicked from an organic certified vineyard on the west side of Margaret River township in late February. Fermented with wild yeast in a mixture of two and three year old French oak barrels and stirred regularly throughout fermentation.  Malo was blocked and the wine was aged sur-lie for 6 months before being bottled without acid additions, finings or filtration.

100% Chenin Blanc. Handpicked in late February, whole bunch pressed and fermented with wild yeast. Riddled and disgorged,with zero additions and less than 1000 bottles made.

Harvested in mid-March, crushed into open fermenters, with wild yeast allowed to do their work. Plunged gently by hand for ten days. No acid additions or finings. Minimal sulphur additions made post-malo and aged in old French oak for 12 months before bottling without filtration.

Handpicked with free-run juice pressed into 3yr old French oak barriques and fermented using wild yeasts. Frequent stirring during fermentation before being aged sur-lie for 5 months. Racked once off lees and bottled without acid additions, fining products, heat and cold stabilisation or filtering. Minimal SOadded pre-malolactic fermentation.

Handpicked Shiraz from an organic, dry grown, south facing and cool micro-climate vineyard in Margaret River. Bunches were de-stemmed and crushed into open fermenters, plunged gently by hand for six days while the wild yeast did their job. Settled in stainless steel and racked only twice before bottling. Zero oak, no filtering or fining needed.
